A Boneless Black Hog Berkshire Free Range Pork leg scored and injected with our Mondo infusion then marinated in olive oil and our Mondo spice mix. Perfect for the Oven, spit or outdoor barbecue oven. 

Serves 10 to 16 persons (minimum net weight 4.5kg).


Black Hog Berkshire Free Range Pork, extra virgin olive oil, red wine vinegar, coriander, cumin seeds, fennel seeds, pepper, sweet spanish paprika, turmeric, oregano, bay leaves, organic lake salt, paprika, rosemary, thyme, basil, marjoram, oregano and sage.  CONTAINS: Red wine vinegar (contains: Sulphites).  GLUTEN FREE.

Cooking Instructions

Whole legs boneless (4.5kg) take about 3½ hours at 175°C. It’s ready when the internal temperature is 65°C to 75°C. Start checking the internal temperature after 3 hours every 20 minutes.
