A Black Hog Berkshire Free Range Pork rack is frenched, scored and injected with our infusion, marinated in olive oil and our Mondo spice mix ready for your oven.

Serves 8 to 10 persons (minimum net weight 3kg)


Black Hog Berkshire Free Range Pork, extra virgin olive oil, red wine vinegar, coriander, cumin seeds, fennel seeds, pepper, sweet spanish paprika, turmeric, oregano, bay leaves, organic lake salt, paprika, rosemary, thyme, basil, marjoram, oregano and sage.  CONTAINS: Red wine vinegar (contains: Sulphites).  GLUTEN FREE.

Cooking Instructions

Remove all glad wrap, paper or cryovac bag from the product.We recommend that all spiced and salted roasts are stored at room temperature for 1 to 2 hours prior to cooking.  Bake in a preheated oven for approx. 2 hours at 175°C using a rack in the tray if possible.  Cook the roast to an internal temperature of 62°C - 65°C. Allow to rest for 20 – 30 minutes before carving.
