A WA Suffolk 8-rib Fully Frenched Lamb Rack paired with WA Torbay Asparagus and our Mushroom Duxelle and then wrapped in Careme puff pastry.

Serves 2 generously to 4 people with trimmings (minimum net weight 0.9kg).

Ingredients

WA Suffolk Lamb, WA torbay asparagus, mushrooms, shallots, garlic, mushrooms, asparagus, shallots, parsley, cream, butter, salt, pepper, Careme Pastry (wheat flour, butter, water, salt, vinegar).  CONTAINS: Gluten, Milk Products. 

Cooking Instructions

Brush pastry with a beaten egg yolk. Bake in a preheated oven at 175°C for 45 to 60 minutes to create medium to well-done, your choice. Rest for 20 minutes before carving.
