An export grade Grass Fed Veal rack fully frenched and will cook in an hour. This spectacular roast is fully prepared and ready for the oven marinated in olive oil and our Mondo spice mix.
Serves 8 to 12+ persons (minimum net weight 2 kg)
Grass Fed Veal, olive oil, organic lake salt, pepper, garlic, paprika, rosemary, thyme, basil, marjoram, oregano and sage. GLUTEN FREE
Remove all plastic. Cover exposed bone with alfoil. Rub the rack with extra virgin olive oil and season with salt and pepper. Peel some cloves of garlic and wash some pieces of rosemary 5cm long. Tie with string between each rib to stop shrinkage. Between each rib poke a hole with a sharp knife, then put a clove of garlic and a piece of rosemary in each of the holes. Put the rack on a wire rack in a tray with ½ cm of water sitting beneath and bake in a pre-heated oven at 220ºC for 1 hour. Pour 1 glass of white wine over the veal. Turn off the oven but leave the veal in the oven for 5 minutes. Remove and wrap the veal in the tray with alfoil so the veal can steam in its own juices for 20 minutes before unwrapping. Slice and serve. The juices in the pan can be reduced or thickened to be served with the meat.
